A Trento DOC that has its roots in the high hills in the heart of the Trentino region, where the vines grace the slopes of the Brenta Dolomites range. Made entirely from Chardonnay grapes, it benefits from the drastic changes in temperature that come with the altitude and yield delicate aromas with the characteristic scent of Golden Delicious apples: the distinguishing varietal trait par excellence.

The vineyard

Vines are grown on steep slopes and the rows mostly have a north-south orientation. The soil is made up of marl and clay. Vines are trained using the single Guyot system.

Harvesting

Picked by hand, the grapes are placed in crates and carried downhill.

Vinification

Grapes are pressed whole so as to gently extract the juice, which is then left to ferment at a temperature of 16°C to bring out the aromas and obtain an extremely elegant wine. The secondary in-bottle fermentation stage starts in spring. Bottles are stored lying down for 12 months. This is followed by a riddling procedure and aging on lees for a further 12 months, for a grand total of 24 months. Following disgorgement, a dash of liqueur d’expedition is added.

Sensory profile

Straw-yellow in colour with a persistent mousse of fine bubbles. Alluring on the nose, with fresh and fruity scents reminiscent of Golden Delicious apples that blend together in a fine bouquet of sweet spices and bread crust. The distinct feeling of dissolving bubbles and the long aftertaste are a joy on the palate. Harmonious, full and perfectly balanced.

Pairings

Excellent aperitif and entrée wine whose qualities truly come to the fore when paired with fish dishes, though it also works well through the whole meal when served with delicate dishes.

Serving

Serve at 8-10°C in long-stemmed very thin-walled flutes.

Storage

Keep out of sunlight in a dry place at a temperature in the 12 to 15°C range.
