ALESSANDRO, GIANMARIO, SIMONE

A Prosecco whose roots are embedded in the loose and pebbly soil of the Friuli-Grave area at the foot of the mountains of the Friuli Dolomites nature reserve. These special characteristics mean the grapes yield a light and perfumed wine.

The vineyard

Grown in the Friuli-Grave area known for its stony ground. Vines are trained using the Sylvoz system with a vine density of 2,300 plants per hectare.

Harvesting

By hand before the grapes reach full ripeness. This results in a wine rich in acidity with moderate alcoholic strength.

Vinification

Must is fermented in stainless steel tanks at a temperature of 18°C. The wine is held at a low temperature to retain the aromas in all their splendour. The Charmat sparkling process is used and the full cycle takes 40 days.

Sensory profile

Pale straw-yellow in colour.
It has a continuous and persistent mousse of ultra-fine bubbles. The delicate and intense aromas are reminiscent of white flowers with fruity apple notes. The mousse dissolves elegantly on the palate, giving way to a pleasant feeling of freshness that finishes smoothly as the wine hits the right level of sweetness.

Pairings

Excellent for any occasion. A very fine conversation and aperitif wine, it goes well with fish dishes, delicate starters and medium-aged cheeses.

Serving

Serve at 8-10°C in long-stemmed very thin-walled flutes.

Storage

Keep out of sunlight in a dry place at a constant temperature in the 12 to 15°C range.
